This fluffy meringue cake isn't as simple as it looks. It's light and airy with an exceptionally crisp outer layer. Within seconds of taking your first bite, you'll experience a lovely crunch, followed by an enticing embrace of a fluffy marshmallow-like texture at its center. What sets this apart from traditional meringues, is a little addition of acidity to its base. Pavlovas are quite temperamental, with little to no endurance against cool air. As tempting as it can be to open the oven to take a peek, if not cooled properly, they will result in a lifeless pile of sugar and egg whites.
Traditionally, these cakes are served with fresh fruit and a homemade whipped cream. Amanda chose to make her own orange curd filling with a citrus whipped cream. And, floating on these fluffy clouds of deliciousness, are a plethora of luminous tangerines.
Blackberry Glaze Cake
Perfect for couples who are bold and not afraid to stand out, the bright colors and fresh fruit will wow your guests with a warm autumn aroma. This delicacy was made from a simple vanilla cake and layered with a local blackberry jam from Great Country Farms. Using a reduction from the jam, Amanda glazed the cake with a light layer; just enough to see some of the cake through the sides. To top it off, the cake was garnished with stone fruits for a contrast of flavor and color.
Chocolate Salted Caramel Drip Cake
Made with Dutch cocoa powder and coffee grounds, this cake smells like sweet coffee on a crisp fall morning. Topped with a salted caramel drip, pomegranates, figs, mixed berries, and spiced merlot poached pears, this cake is fitting for the creative at heart.
Lemon Meringue Tarts
This sweet treat is filled with fresh lemon curd made from sugar, lemon juice, egg yolks, butter, and lemon zest. Its tart flavor is garnished with a soft and fluffy meringue for a nice balanced bite. They're a perfect addition to any dessert table spread!
Looking to make a statement? This cake is for you! Croquembouche is a tower of stuffed Pâte à Choux Puffs, or in other words, Profiteroles. Croquembouche is a french phrase meaning "something that crunches in the mouth" and can be dated all the way back to the 1800s. To add texture and glue the puffs together, Amanda garnished the treat with caramel and spun sugar around the top, for a delicate but tasty look.
This Blueberry Galette is very similar to a flat pie. The crust is made from a rich pastry dough which gives it a great flaky texture. Amanda filled her galettes with fresh blueberries tossed in cornstarch, sugar, and lemon juice and baked them until they were lightly browned. These petite pies could make a great take-home favor for guests to be able to enjoy at their leisure.
